You probably don't need us to tell you that the Aperol spritz is a worldwide juggernaut of a cocktail. Italian Aperol is a less bitter and more fruity aperitif than Campari. It's fruity notes and vibrant orange hue make it look captivating in an ice-filled glass with bubbly prosecco and a splash of club soda. In this surprising version, a spoonful of olive brine adds punchy flavor that beautifully balances out both the bitterness and sweetness of the Aperol. The brine and the pimiento-stuffed olive garnish also give off subtle martini vibes, perfect for a classic cocktail-loving guest that's finally ready to dip their toes into the wonderful world of spritzes. Ingredients

  • 1/4 cup Aperol

  • 1/4 cup dry sparkling wine

  • 1/4 cup club soda

  • 1 1/2 tsp. brine from a jar of pimiento-stuffed green olives

  • Pimiento-stuffed green olives, for garnish

Directions

Fill a glass halfway with ice. Add the Aperol, sparkling wine, club soda, and olive brine. Stir to combine. Garnish with olives.
