Tender pieces of salmon are seasoned with flavor-packed everything bagel blend – a seasoning hack that’ll take your food from good to great any day of the week. Sandwiched between the skewered salmon are slivers of crisp bok choy and assertive scallions that pick up a glorious char as they cook. Complete with a stirred-together spicy mayo and white rice, this is a mouthwatering meal you’ll keep on heavy rotation. Ingredients 1 cup long-grain white rice 1/4 cup mayonnaise 1 1/2 Tbsp. rice vinegar 1 Tbsp. Sriracha 2 small heads baby bok choy, leaves separated 1 bunch scallions 1 1/2 lb. skinless salmon fillets, cut into 1 1/2-in. chunks 3 Tbsp. everything bagel seasoning 1/4 tsp. kosher salt 2 Tbsp. canola oil Directions Cook rice according to package directions. Meanwhile, stir together mayonnaise, vinegar, and sriracha in a small bowl; cover and refrigerate. Cut bok choy into 11/2-inch pieces. Cut white and light green scallion parts into 11/2-inch pieces. Thinly slice dark green scallion tops. Place salmon in a large bowl; toss with seasoning, pressing seasoning onto salmon. Thread 1 salmon piece onto each of 8 (8-inch) skewers. Add 3 bok choy pieces and 1 scallion white piece. Repeat twice, then add a final piece of salmon to each skewer (for 4 pieces total). Sprinkle with salt. Heat a grill pan over medium-high. Brush with oil and add skewers. Cook until vegetables are charred in spots and salmon is cooked through, about 2 minutes on all 4 sides.
