These new iterations of products are really going after the flexitarian customer," Amy Gaston-Morales, one of the chain's category managers, said on a 2021 episode of the Inside Trader Joe's podcast. "As people are looking for ways to have a healthier lifestyle and improve their overall general health … they are incorporating meat-free days."
