Chunks of oil-packed canned tuna and tender chickpeas mingle with buttery olives, briny feta, juicy cherry tomatoes, and crunchy pita chips. A clever dressing uses the olive oil from the jar of tuna plus a lemon which results in a bright dressing with a gorgeous citron-like hue. Repurposing the oil from the jar is a brilliant way to get more bang for your buck. Serve the mixture over peppery arugula for a salad we predict you'll keep on heavy rotation. Ingredients 6 oz. tuna in olive oil 15 oz can chickpeas drained and rinsed 1 1/2 cups cherry tomatoes, halved 6 oz feta cheese, crumbled 1/2 cup green olives, pitted and roughly chopped 1/2 tsp kosher salt 1/4 tsp ground black pepper 3 tbsp fresh lemon juice 1 cup pita chips, broken into 1-in. pieces 1/4 cup chopped fresh parsley, optional 5 oz baby arugula Directions Drain tuna, reserving oil; flake tuna into 3/4-inch pieces. Place in a large bowl and add chickpeas, tomatoes, cheese, olives, salt, and pepper. Toss gently to combine. Pour reserved oil from tuna through a fine-mesh strainer into a medium bowl. Whisk in lemon juice until bright yellow and emulsified, about 1 minute. Drizzle over tuna mixture; stir to combine. Gently stir in pita chips and, if using, parsley. Serve over arugula.
